Thought experiment: if you were offered Kombu salt to finish your dish, would you accept? If you were offered MSG crystals? Same stuff, quite likely a different answer.

Tom, you’re quite right on this – glutamate, the soluble form of MSG, is present in all foods that are tasty – tasty in the umami sense. So unless you’re cutting out mushrooms, tomatoes, marmite, Lea & Perrins, parmesan, bacon – the list goes on an on and on – you are kidding yourself that you are eating a glutamate free diet.
